This wine has signature bell pepper and herbal aromas, with vibrant notes of strawberry, raspberry, crushed gravel, and a hint of tobacco. It offers black currant, cherry, and brambly berries on the palate, with wild strawberries and plums. The high acidity provides a refreshing edge, enhancing its food-pairing potential.
It is ideal with fresh herbs, tomato-based sauces, vinegar-driven dishes (like smoky BBQ), roasted lamb, and wild game. It also shines alongside rich vegetable dishes such as hearty lentil stew. Harvest & Winemaking
The 2022 vintage started out very cool, but Mother Nature turned up the heat towards the end of the growing season, resulting in evenly ripe fruit with a long hang time. The Cabernet Franc was processed into small open-top fermenters, where it spent 5 to 7 days. After pressing, the wine was aged in a combination of new American and neutral oak barrels for 18 months before racking and bottling.
